This version of Mapo Tofu (or Mabo Tofu), popular in Japan, is a milder take on the spicy Sichuan version with Japanese umami flavors. Silken Vermont tofu and ground pork swim in a flavorful broth of sake, miso, ginger and soy. Served over rice and topped with scallions. Vegetarian version omits pork.
